Impossible Pumpkin Pie


¾ cup sugar
½ cup Bisquick
2 Tbsps. Margarine/butter
1 13 oz. can evaporated milk
2 eggs
1 can (16 oz.) pumpkin
2 ½ tsp. Pumpkin pie spice
2 tsp. Vanilla extract

Heat oven to 350 degrees. Grease pie plate (10 x 1 ¼ inch). Beat all ingredients until smooth, 1 minute in blender or 2 minutes with mixer. Pour into pie pan. Bake until knife inserted in center comes out clean. 50 to 60 minutes. Let set up and cool completely before cutting.
