2-3 Pounds pork tenderloin
1/2 Teaspoon paprika
1/2 Teaspoon cumin
1/2 Teaspoon chili powder
1/2 Teaspoon cinnamon
1 onion, medium
1 red bell pepper
1 yellow bell pepper
2 garlic cloves, minced
1/4 Cup brown sugar
1 Tablespoon Tabasco sauce
2 Tablespoons olive oil
salt & pepper to taste\
Mix the ingredients for the dry rub in a small bowl. Smoked Paprika, Cumin, Chili Powder, Cinnamon, Salt & Pepper
Sprinkle the dry rub on all sides of the tenderloin and set aside.
Coarsely chop the onion and bell peppers.
Mix brown sugar, garlic and Tabasco sauce in a bowl.
Place onions and peppers in bottom of slow cooker
Place the tenderloin on top of the onions and peppers
Coat with brown sugar mixture and then drizzle with 2 tablespoons of olive oil
Cover and cook on low 6 hours
