4 cups finely chopped peaches (pitted and pealed)
2 Tbsp.lemon juice
1 package (1.75 oz) of regular powdered fruit pectin
5 cups – granulated sugar
In a large stainless steel saucepan, combine peaches and lemon juice.
Add the pectin and whisk until it is dissolved.
Bring to a boil, stirring frequently.
Add sugar and return to full boil
Boil hard for 1 minute – stirring constantly.
Remove from heat and skim off the foam.
Ladle the hot jam into the hot jars and remove air bubbles.
Place lids on jars and screw down the bands (finger tight).
Place jars in hot water bath and make sure they are completely covered with water.
Bring to a boil and process for 10 minutes.
Remove lid from hot water bath and let cool for 5 minutes.
Remove jars and allow to cool
