Great way to make these without breaking the cookies.
Chocolate Chip Cookies
Get a cookie sheet and lay some parchment paper on top of it. The paper keeps the ice cream from sticking. Cut the ice cream out of the box and put it on the parchment paper. Put another layer of parchment paper on top.
Using a rolling pin, roll it out until it’s a little less than an inch thick. Using a glass or round cookie cutter, cut out the ice cream for however many sandwiches you’re making.
Using a spatula, pick up the ice cream, lay it on one of the cookies and top it with another. Wrap each sandwich in plastic wrap and return to the freezer until you’re ready to serve them.
(note a gallon of ice cream will make about (6) sandwiches with a little left over for the cook to enjoy with a spoon)
