Baked mashed potatoes


4 large baking potatoes,
6 slices bacon cooked
1/2 cut shredded cheddar cheese
3 green onions chopped
1 tablespoon parsley
1/8 cup milk
olive oil

Boil potatoes, mash with milk and add butter to taste
stir in bacon, cheese, parsley, green onion

Stuff in to a greased muffin tin, run a fork along the top and brush with melted butter or olive oil. Bake at 375 degrees or until tops are crispy and golden.
